How to make a southwestern soup

Soup is quite a souperb idea for the low temperatures and rainy day. One might even say it's a soupendous option for a cozy evening watching your favorite classic movie. Now that I'm done with soup puns, here's  a simple yet hearty soup for sweater weather.


  • 5 cups chicken broth
  • 3 tomatoes 
  • 2 jalapenos
  • 1 medium white onion
  • half cup of cilantro
  • 1 1/2 cup of canned black beans
  • 2 cups cooked, chopped chicken
  • 1 cup corn
  • 1 1/2 cup of cooked rice
  • salt and pepper to taste
  • pinch of cumin
  • pinch of paprika 
  • 3 tablespoon of olive oil
  • Optional toppings: tortilla strips, fresh avocado slices, cheddar and Monterey jack, sour cream

Directions: Chop onions, tomatoes, and jalapenos. Set aside. In a dutch oven, add onions and olive oil. Let onions brown. Add chicken broth, rice, chicken, corn, beans, tomatoes, and jalapenos. Add seasonings.

Let cook on medium heat for 30 minutes. Add cilantro. Continue to cook on low heat for 20-30  minutes. Add toppings and serve.
